Jim, your Caesar salad story reminded me of my Mom.

When I was somewhere between birth and 12, she got a job as a hostess at the swankiest eatery in our town at the time. One of their specialties was Caesar salad. Mom learned from the staff how to prep, make, & serve it.

And she did...to Dad & 4 kiddos...who were quite properly amazed. She even wore her hostess garb-black dress, heels, and frilly white apron-to complete the experience.

One of my most precious Mom Memories. Thanks!

When i read the ingredients for your salad, I wondered if you were preparing to feed the 5,000! 5 garlic cloves? A half cup of parmesan? That's a lot! As for coddling eggs, I'm 82 and have not yet mastered the art of cracking an egg without getting it all over both hands, sometimes winding up with my thumb stuck right through the yolk! Ick! But it's okay, I don't coddle eggs, I beat them up by scrambling them with a bit of cheese, bell peppers, and onions, scrambled dry, then add 1/4 tsp coriander, 1/4 tsp black pepper, and my own invention of no salt seasoning. Since I don't really like the taste of eggs, the extra ingredients and seasonings cover it up quite nicely. And I could NEVER eat a raw egg! 😆

Granted, I love garlic. As with all recipes, adjust to taste... or whether you will have a business meeting tomorrow.

In Japan, poultry hygiene is so strict you can safely eat raw eggs, especially Quail eggs on Unagi roll with a sprinkle of Tobiko (flying fish eggs—also raw.) Maybe the other ingredients in the Caesar dressing help render the yolk harmless. 🤔

Do you know the term "slimy"? 😆 That’s what keeps me ftom eating raw eggs of any kind, no matter how "clean". Js

I mother has a cat named Pancho. Despite its name, I think it's a Japanese cat. It loves to eat sushi rice, Japanese udon noodles (but not spaghetti), and nori (seaweed laver).

I've always said there are two things EVERYONE should have to do when they are young, and one of them is to be a waiter/waitress. I guarantee that no waitstaff has ever been stingy with a tip.

My dad could do coddled eggs like no one's business...alas, that talent has eluded me...

Fun post (although the word CATS really grabbed my attention!). I am an unapologetic Cat Lady (my son-in-law even calls me Cat Mom) and if I could, I'd make sure every cat has a loving home.❤️ I currently have 6, and after 43 years of marriage my husband has finally accepted the fact he married a feline-obsessed lady. 😺 Cats really are the best, and whenever I meet someone who says they're "not a cat person," I just smile politely and assume they were a mouse in a previous life! 😉😹

You can’t go wrong with 5 cloves of garlic. Although I have no idea why you would use a wooden bowl, I always enjoyed the ritual of keeping it oiled and rubbing it with a whole anchovy before making the salad.

Thanks for the recipe, I’ll try the Tapatio.

Yeah, I've always heard that a wooden bowl is best, maybe because the lettuce doesn't bruise as easily or is just more appreciative.
